Healthy Mozzarella Sticks!
What you need
12 sticks of string cheese in your choice of cheese, go for the low sodium kind if you want to be extra healthy
1 egg
2 tbsp of flour
5 tbsp of bread crumbs
2 tbsp of parmesan cheese
A dollop of olive oil, or cooking spray
Preparation
Cut the cheese sticks in half, making 24 slices, then freeze the slices in the freezer until completely frozen
Beat the egg in a small bowl. Use a separate bowl to combine the bread crumbs and parmesan cheese
To bread the cheese sticks: First dip the frozen cheese stick into the flower, then into the egg, then into the bread crumb mixture
Once all of the 24 sticks are coated, place them on a baking sheet covered with aluminum foil coated with a few drops of olive oil or sprayed with cooking spray (this will keep cleanup to a minimum, and keep the sticks from sticking!)
Bake in the oven at 400 degrees for about 4 minutes, or until crisp. They need to be watched closely so they don’t melt completely!

FORGET THE SCALE-HERE’S THE PROOF

I’m really nervous to put these pics up. Originally, I said “no way” would I ever put pics of my disgusting stomach up on Tumblr but now I can look back and see the amazing changes that have taken place and you know what, I love that fat stomach-but I love that trim stomach much better :D (These pics were taken every two to three weeks between March 21st and May 20th)

Recently I was feeling extremely down about my progress. I got completely caught up in the numbers on the scale-but those numbers can’t measure how much sweat I put into each exercise. That scale cant measure how much willopwer it took me every day to resist bad foods. It cant measure the occassional feelings of discouragement I faced-or the strength that it took to overcome them.

Sometimes the scale is simply unworthy in it’s ability to measure effort. But each picture tells a thousand words right- so here’s 5,000. But even 5,000 words can tell the story of each drop of sweat or each tear that was shed. 5,000 words even, is useless to describe this journey…and I’m only half way there.

Spread the word-we are all beautiful. You have to love yourself-no matter the shape or size-because if you don’t love yourself you won’t care enough to even make a change. Spread the word-the scale can’t measure all your effort-it doesn’t define you.

YOU define what you are-and what you will be!!!
